We don’t have much writing in/from the languages of any Scythian cultures–the most available set of texts is from Khotan (see Saka language on Wikipedia for more).
One exceptional item is the Issyk bowl, a vessel with some writing inscribed on it whose meaning is still debated. Wikipedia has an entry with more detail on the inscription.
It is unclear whether the Issyk bowl is written in the Kharosthi script (Wikipedia), which was used for Khotanese Saka texts and for other languages in central Asia.
Unfortunately, we do not have any information about what sort of education that Scythians of various cultures/communities would receive (beyond, perhaps the sort of animal husbandry and craft work depicted in Pontic Steppe art that would be typical of nomadic lifestyles).
